How to Make a Gluten‐Free Pizookie

Three Methods:

Pizzas and cookies are among the greatest foods ever. What'seven betteris a pizookie. This silly-sounding treat is a giant chocolate chip cookie, baked in a skillet, and garnished with chocolate sauce and ice cream. If you are on a gluten-restricted diet, don't worry, you can still enjoy a gluten free pizookie. There are even gluten free vegan and paleo options as well!

Ingredients

Basic Gluten Free Pizookie

  • 2¼ cups (315 grams) all-purpose gluten free flour
  • 1 teaspoon xanthan gum (omit if your flour already has it)
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1⅓ ounces (235 grams) semi-sweet chocolate chips
  • 1 cup (225 g) unsalted butter, melted and cooled
  • ⅝ cup (125 grams) granulated sugar
  • ¾ cup (164 grams) packed light brown sugar
  • 2 eggs, at room temperature, beaten
  • 2 teaspoons pure vanilla extract
  • Vanilla ice cream, to serve

Serves 6

Vegan Gluten Free Pizookie

  • ⅓ cup (75 grams) vegan butter
  • ⅜ cup (75 grams) light brown sugar
  • ¼ cup (55 grams) granulated sugar
  • ¼ cup (64 grams) unsweetened applesauce
  • 1 teaspoons vanilla extract
  • 1 cup (120 grams) all-purpose gluten free flour
  • ¼ teaspoon xanthan gum (omit if your flour already has it)
  • ⅜ teaspoon sea salt
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ cup (90 grams) 55% cacao baking chips
  • ½ cup (90 grams) 85% cacao baking chips
  • Dairy-free ice cream, to serve

Serves 2 to 4

Paleo Gluten Free Pizookie

  • 1 cup (100 grams) blanched almond flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup (50 grams) coconut oil, solid at room temperature
  • ⅓ cup (75 grams) coconut sugar
  • 1 egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (90 grams) chopped dark chocolate
  • Dairy-free ice cream, to serve

Serves 2 to 4

Steps

Making a Basic Gluten Free Pizookie

  1. Preheat your oven to 375°F (191°C).
  2. Grease your desired pans.You can use three 6½-inch (16.51-centimeter) cast iron skillets or cake pansorone 9-inch (22.86-centimeter) cake pan. Set the pans aside when you are done.
  3. Mix the dry ingredients together.Measure out the gluten free flour, and pour it into a large bowl. Add the baking soda and salt. If your blend doesnotcontain xanthan gum, add 1 teaspoon of xanthum gum to the bowl. Stir everything together with a whisk to combine.
  4. Mix the baking chips with 1 tablespoon (15 grams) of your flour mixture.Measure out the baking chips and put them into a separate bowl. Add 1 tablespoon of your flour mixture. Toss the chips with the flour until they are lightly coated.
  5. Whisk together the butter, sugars, eggs, and vanilla extract in a separate bowl.Pour the melted butter into a separate bowl. Stir in the granulated sugar, then the brown sugar. Whisk in the beaten eggs, and finally, the vanilla extract. Beating the batter after each added ingredient will give you a smoother texture.
  6. Stir in the flour mixture.Mix it in a little bit at a time until it is just combined.
  7. Add the chocolate chips.Stir them in until they are mixed evenly throughout the dough. Be sure to scrape the bottom and sides of the bowl often.
  8. Place the dough into your prepared pan(s).If you are using three 6½-inch (16.51-centimeter) pans, be sure to divide the dough amongst them evenly. Press the dough up a the sides of the pan(s) a little bit to form a pizza-like crust.
  9. Bake the pizookies.Bake 6½-inch (16.51-centimeters) ones for 13 minutes. Bake 9-inch (22.86-centimeter) ones for 22 minutes. They are ready when they turn golden brown on the edges; they will still be a little soft in the middle.
    • The 6½-inch (16.51-centimeters) cake pans may require a few extra minutes of baking.
  10. Serve the pizookie with a scoop of ice cream.Vanilla ice cream is the most popular choice, but you can use any type of ice cream you'd like. For the ultimate pizookie, add a drizzle of chocolate sauce over it. Serve it immediately.

Making a Vegan Gluten Free Pizookie

  1. Preheat your oven to 350°F (177°C).
  2. Grease an 8-inch (20.32-centimeter) cast iron skillet.Use a vegan butter for this, or another flavorless vegetable or nut oil.
  3. Mix together your dry ingredients.Measure out your gluten free flour and pour it into a large mixing bowl. Add the salt, baking soda, and baking powder. If your gluten free flour blend does not contain xanthan gum, add ¼ teaspoon of xanthum gum.Stir everything together with a whisk.
  4. Cream the butter and sugars.Put the vegan butter into a separate bowl. Add in the granulated sugar and brown sugar. Beat everything together using a mixer until the butter is light and fluffy.
  5. Add the vanilla extract and unsweetened applesauce into the butter mixture.Stir everything together with a rubber spatula until evenly combined.
  6. Blend the dry ingredients and wet ingredients together.Add the flour mixture into the butter mixture. Use your mixer to blend them together on a medium speed setting until they are evenly combined.
  7. Stir in the chocolate chips with a rubber spatula.Add ½ cup (90 grams) of 55% cacao baking chips and ½ cup (90 grams) of 85% cacao baking chips. Stir them into the batter by hand with a rubber spatula.
    • If you can't find any baking chips, you can use vegan chocolate chips instead. Make sure that they can hold up to baking, however.
  8. Transfer the batter into the prepared pan.Use a rubber spatula to spread the batter around. Try to get it as even as you can.
  9. Bake the pizookie for 27 to 30 minutes.It is ready when it turns golden brown and a toothpick poked into the center comes out clean.
  10. Garnish the pizookie with dairy-free ice cream.For a fancier pizookie, drizzle some melted chocolate on top. Serve the pizookie immediately.

Making a Paleo Gluten Free Pizookie

  1. Preheat your oven to 350°F (177°C).
  2. Grease a 5-inch (12.7-centimeter) cast iron skillet.Coconut oil would be the best, but you can use another flavorless vegetable or nut oil if you prefer.
  3. Mix together your dry ingredients.Measure out the almond flour, salt, and baking soda. Pour them into a large mixing bowl. Stir them together with a whisk until they are evenly combined.
  4. Cream the coconut oil and the coconut sugar.Measure out the coconut oil and the coconut sugar. Beat them together in a mixer until the coconut oil is light and fluffy.
  5. Beat in the egg and vanilla extract.Keep mixing until the egg is evenly blended into the coconut oil and no streaks remain.
  6. Stir the flour mixture into the coconut oil mixture.Gradually add the flour mixture into the coconut oil mixture, stirring it with a rubber spatula. Be sure to scrape the bottom and sides of the bowl often.
  7. Add in the chopped chocolate.Fold the chocolate into the batter with a rubber spatula. Make sure to scrap the bottom and sides of the bowl often. Keep stirring and folding until the chocolate is distributed evenly throughout.
  8. Pat the dough into the prepared pan.If you'd like to, you can press the dough a little bit up the sides of the pan to form a slight crust, just like in a pizza.
  9. Bake the pizookie for 15-18 minutes.It is ready when it starts to turn golden around the edges.
  10. Garnish the pizookie with dairy-free ice cream.Serve it immediately, while it is still warm. For a richer pizookie, add a drizzle of melted chocolate on top.

  • If you don't have an electric mixer, you can use a handheld mixer instead. You can also use a food processor fitted with whisks instead.
