  • It is necessary to clean the fish from the scales. For this we need a short vegetable knife. It is important to start with the tail, gradually moving to the head.
  • Separate the head of salmon. To do this, make cuts by slipping the knife under the gill plate. Direct the knife at an angle, trying to leave more fillets on the ridge.
  • Separate the fillet from the bone. Now come in handy flexible knife. Start from where the carcass had a head. Aim to keep the knife as close to the bone as possible. The flexible knife allows you to cut the fillet as clean as possible. Separating one half of the fillet, turn the carcass over, separate the other.
