Egg rolls with avocado and shrimp
You will need
- - eggs - 4 pcs .;
- - Milk 2.5% - 3 tbsp. l .;
- - Dill greens - 5-6 branches;
- - Sunflower oil - 2 tbsp. l .;
- - shrimp - 200 g;
- - Avocado - 1 pc .;
- - lemon - 1 pc .;
- - blue mold cheese - 100 g;
- - lettuce leaves - 6 pcs .;
- - salt - pinch.
Cooking an omelet. Beat eggs with milk, salt. Rinse the greens with water, remove the coarse stems, finely chop. Add chopped greens to the egg mixture. In sunflower oil, bake two omelets (fry each omelet on both sides).
Cooking stuffing. Boil shrimp, peel the shell. Finely chop. Peel avocados, remove the bone, mash the flesh with a fork. Drizzle avocado with lemon juice. Crumbled blue cheese. Combine the shrimp, cheese and avocado, mix.
Spread the stuffing evenly over the omelets and roll them into rolls. Cut the rolls into portions. Put on lettuce leaves. The dish is ready.
